Quick & Easy Vegan Breakfast

To be honest, I can’t count anymore how often I’ve made eggless French Toast, because it has definitely been that much, haha! Anyways, I think that this is positively proof that I‘m not lying when saying that I LOVE it! Also, you can choose to either pan-fry your dipped bread slices or bake them in the oven. (Continue reading for details.)

How to substitute eggs

The first time I made Vegan French Toast, I used flaxseed-eggs instead of regular eggs and that worked well! However, I’ve discovered that it tastes even better to me when using mashed bananas as an egg substitute. Since so many of you often ask me what to use instead of bananas, I tried yet another version and used chickpea flour, which as it turns out, works perfectly too. But, to be honest, I really can’t understand people who don’t like bananas!

How to cook Vegan French Toast

If you pan-fry your dipped bread slices, then your Vegan French Toast will get soft and moist but will still be perfectly golden-browned with crispy edges. This is, to me, the BEST way! Anyways, if you prefer to bake your dipped bread as I did with my Apple Pie Roll-Ups, it’ll get crispy which kinda reminds me of a crisp cake crust. Another option is to cover your bread slices with shredded coconut flakes before baking. Then it’ll taste like coconut crispbread, which is also known as „rusk“. How to serve

This Vegan French Toast is delicious with all sorts of toppings! You can serve it the same way as you enjoy pancakes, waffles or crepes. I love spreading some non-dairy cream cheese (or coconut yogurt) and mashed raspberries on top of my slices. Then I stack up my slices and add some more raspberries, pomegranate and a drizzle of maple syrup on top which definitely is like having dessert for breakfast! Anyways, feel free to use any toppings and fruit you like.

FAQs

Should French toast have more eggs or milk? ›

Whatever you decide on, the ratio of liquid to egg will still be about ¼ cup liquid to one egg, and one egg per two slices of bread. So, if you want to make four slices of French toast, you would need four slices of bread, two eggs, and ½ cup milk. How's that for an easy recipe?

If the pan isn't hot enough when you put your first slice in, the custard spreads out, forming a "foot" on the bottom of the French toast. When the pan is hot enough, the batter won't have time to seep; the custard will start cooking as soon as it hits the pan. Give the pan a light coating of neutral oil and butter.

How much do you soak French toast? ›

Ideally it's best if you can soak the bread in the french toast batter overnight however, if this cannot be done I suggest leaving it soak for a minimum of 30 minutes to 1 hour. As we want that custard like middle, cut very thick slices of bread.

What is the secret to good French toast? ›

The secret ingredient in this fluffy French toast recipe: all-purpose flour! Flour binds the liquids together, which creates a more traditional “batter” and helps prevent soggy results. This extra ingredient ensures the French toast is crispy on the outside, but soft and fluffy on the inside.

Why is restaurant French toast so much better? ›

If you wondered why baked French toast at restaurants is so custardy and delicious, it is because they do not just pour and bake. A few minutes simply will not cut it. Restaurants may let the bread sit in the egg and milk wash overnight, allowing a thorough saturation before cooking.

How do you jazz up French toast? ›

The standard approach can be gussied up even further beyond the requisite maple syrup and/or powdered sugar. I'm especially partial to some sort of caramelized or brûléed banana or peaches with brown sugar which is then poured over the French toast, but some rehydrated dried fruit is also a wonderful inclusion.

Should I leave bread out overnight for French toast? ›

Ideally, the bread should be slightly stale. A drier bread will soak up all the custard. Bread can be left out with the wrapper open the day before cooking. If you find yourself in a pinch, dry your bread slices in a 275°F oven for 10 minutes before soaking them in the custard.

Why is my French toast always soggy? ›

Because you're cooking it with the Heat on too high. Pancakes should be done on medium-high heat, about 375. French toast needs to be set much lower, like eggs, about 325. This allows for the heat to penetrate through the thickness of the bread and cook the egg mixture all the way throug...

Why does my French toast taste like eggs? ›

If the balance is off and you include too many eggs or not enough milk, the finished French toast will have a scrambled egg-like flavor. When scaling this recipe up or down, keep in mind that you need 1/4 cup of milk for every egg.

What is the most common fault when making French toast? ›

1. Not choosing the right bread. The heart and soul of French toast really is the bread — use something sub-par and the final result is going to be sub-par. The best bread is spongy and sturdy so that it will be able to soak up the custard without completely falling apart.

Why is my toast always soggy? ›

When toast is allowed to lay flat down, condensation can build up and get trapped on the underside. This moisture then seeps back up into the bread, causing one side of your toast to become soggy.

How to make toast crunchy? ›

Adjust the toaster settings: Set your toaster to a higher setting, which will increase the toasting time and make the toast more crunchy. Be careful not to burn the toast. Toast both sides: To make the toast extra crunchy, toast both sides of the bread.

What happens if you soak French toast too long? ›

The first is using fresh bread, which soaks up too much of the egg mixture and doesn't cook through, remaining eggy and soggy in the middle. Leaving the bread in the egg mixture for too long is another route to soggy French toast.
