Why This Recipe Works

Two things I seriously missed while on my Whole30 adventure a few years ago were popcorn and any sweet treat. I love popcorn in all of its salty yumminess and eat this tasty snack pretty regularly and I love my sweet treats. The first time this Toasted Coconut Chips recipe emerged from our oven, they became the perfect Whole30-compliant replacement.

They are crunchy, salty, sweet, satisfying my sweet tooth and my desire for a touch of something salty. This is one of the easiest snacks you’ll find and will totally carry over into non-Whole30 life.

If you are following the Whole30 program, make sure to read the ingredients on your coconut chips before purchasing. The only ingredients listed should be coconut and salt.

Recipe Ingredients

Coconut chips – This recipe works best with unsweetened coconut chips or shaved coconut, as opposed to unsweetened coconut flakes, but in a pinch flakes will work. (Dang coconut chips are a brand that works very well for this recipe!) They’re just as yummy, but much messier. Coconut chips can be easily found on Amazon or at Whole Foods or other grocery stores.

Olive oil –Best oils to use that comply with Whole30: Coconut oil, extra virgin olive oil, ghee and clarified butter.
